The temperatures dropped again today (I woke up to it being 30 outside!) so naturally I had to continue with my soup quest! This recipe is AMAZING and actually fairly healthy too!
What you need:
Olive Oil
28 oz can of tomatoes
1 can black beans (drained/rinsed)
5 cups of Chicken Broth
1 large chopped onion
4 cloves of garlic
2 large chopped carrots
2 chopped celery stalks
2 cups of green beans (1" pieces)
1/4 head of chopped cabbage (I used red)
2 small peeled and chopped potatoes
1/2 teaspoon Garlic Powder
1/2 teaspoon Onion Powder
1 teaspoon Pepper
pinch of Salt
pinch of Cayenne Pepper
What you do:
Cook onions and garlic on stovetop (in olive oil) - I did this in a pot (you will see why)
After onions are cooked/tender, add: more olive oil, carrots celery, green beans, cabbage, potatoes, and spices.
Cook on stovetop for at least 5-8 minutes.
While that is cooking add broth, beans, and tomatoes to the crock pot.
Add the rest of the veggies.
Cook for 5-8 hours.
Enjoy!
Of course y'all know me - I had to top it with Parmesan Cheese and serve it with bread and butter. (It is the south!)
